Simplify CI test matrix to single-version dependencies (#88)

* Initial plan

* Simplify CI test matrix to single-version dependencies

- Pin Python to 3.11 across all CI workflows
- Pin MongoDB to 7.0 in integration tests and docker-compose
- Remove matrix builds from adapter and ingestion workflows
- Remove parallel Coveralls finalization (no longer needed)
- Simplify artifact names without version suffixes
