fix: correct test expectations for SanitizePath trailing underscores

The test was expecting trailing underscores to be preserved after character
replacement, but the implementation correctly trims them (as validated by
TestSanitizePathTrimming tests). Updated both windows and unix test cases
to match the actual and expected behavior.

Fixes Linux-specific test failure in CI.
