Update catch2 (#29)

* update compiler flags to make it more in line with "modern" cmake
* switch to newer Catch2, install it with `FetchContent_MakeAvailable`
* remove EXTERNAL_CATCH2 option; should be able to use `Dependency Providers` from CMake to supply Catch2
