ci: make environment generic to avoid breaking it

For a while now, I've been using the latest version of everything, specifically the keyword "latest," because I assumed that would make everything work. Latest version of macOS, latest version of Xcode, just trying to make this environment work.

Clearly, GitHub Actions or something similar is not updating accordingly, and it's causing bugs. It's just getting really annoying.

So now I think I want to do the inverse and just let the defaults for GitHub Actions take care of everything. They choose the latest version of macOS, they choose the Xcode version.
