feat: Add Coveralls integration

Integrates Coveralls into the GitHub Actions workflow for continuous
code coverage reporting. This includes:
- Installing the 'coveralls' package.
- Modifying the pytest command to generate an XML coverage report.
- Adding a step to upload the coverage report to Coveralls.io.
- Adding a Coveralls badge to the README.md.
