chore: bump all package versions to 0.2.0.0

Update all package versions from `0.1.x.x` to `0.2.0.0`, including
library and publish folders for PinionCore.Remote. This minor version
increment reflects recent significant changes like enhanced
descriptions for packages and addition of new features and protocols.

Descriptions of several projects have also been updated to
better reflect their roles within the system, improving
documentation accuracy and providing a clearer understanding.
