Refactor functions to accept logger parameters after dependency bumps

Refactor InitializeAWSConfig to accept *logp.Logger parameter and update
all call sites to pass logger instances. This is part of ongoing effort
to avoid use of global logp loggers, which will help with work of beat
receivers.

Changes:
- Refactor InitializeAWSConfig in awslib/config.go to accept logger
- Update all 7 call sites of InitializeAWSConfig to pass logger
- Fix kubernetes.NewWatcher call to include Indexers and logger params
- Update processor constructor signature to match processors.Constructor
- Update processors.New calls to include logger parameter
- Fix OpenTelemetry semconv version mismatch (v1.34.0 -> v1.37.0)

All tests pass after these changes.
