Opentracing support dropped after v2.0.2. (#654)

This PR removes support for OpenTracing modules from the project. OpenTracing has been archived by the CNCF in favor of OpenTelemetry, making these modules obsolete. The PR completely removes two modules (context-manager-opentracing and context-timer-opentracing) while maintaining backward compatibility by pinning them to their last released version (2.0.2) in the BOM.

Key Changes:

Complete removal of context-manager-opentracing and context-timer-opentracing modules
Removal of OpenTracing dependencies and properties from the parent POM
Pinning removed modules to version 2.0.2 in the BOM for backward compatibility
