* Add new model configurations and fixtures for various providers

- Introduced new model files for providers including Anthropic, OpenAI, and others, enhancing the model registry.
- Added multiple JSON fixtures for testing, covering various scenarios and tool interactions for the new models.
- Updated `priv/supported_models.json` and `priv/models_dev/.catalog_manifest.json` to reflect the new models and their configurations.

These additions improve the coverage and capabilities of the ReqLLM library, ensuring better support for diverse AI interactions.

* Update model configurations and last checked timestamps

- Updated the `last_checked` timestamps for various models in `priv/supported_models.json` to reflect the latest checks.
- Added new model configurations for Amazon Bedrock and Hugging Face, including multiple Qwen models and MiniMax models, enhancing the model registry.
- Removed the GPT-5 Pro model from OpenAI configurations, marking it as excluded.
- Updated the catalog manifest in `priv/models_dev/.catalog_manifest.json` to reflect the new generation timestamp and hash.

These changes improve the accuracy of model availability and enhance the overall model support in the ReqLLM library.

* Remove deprecated fixtures and update model exclusions for Anthropic

- Deleted outdated JSON fixtures for various models under the Anthropic provider, including `claude_3_5_sonnet_20240620` and `claude_3_5_sonnet_20241022`, to streamline the testing process.
- Updated `priv/models_local/anthropic_exclude.json` to include new model exclusions, enhancing the accuracy of model availability in the ReqLLM library.
