Fix: Mark metadata accessors as defoverridable

The metadata accessor functions (name/0, description/0, category/0, tags/0,
vsn/0, actions/0, schema/0) are part of the public API and should be
overridable by downstream code.

Without defoverridable, attempting to override these functions causes
compiler warnings about unreachable clauses.

This aligns with the existing pattern for lifecycle callbacks and enables
proper extension of Agent modules.
