chore: Bump apollo/client and graphql to its latest major. Added new peer-deps rxjs.

* Mostly of the changes are related to imports changes made by the codemod in the imports and types sections.
* Manually removed TS declarations added that are not necessary as we are not using e.g. graphQL directives.
* Applied the codemod to tests files and manually adapt types declaration and jest.mocks.
