feat(sqs): Add fastProcessingEnvironments option

This commit introduces a new `fastProcessingEnvironments` property to the SQS consumer configuration.

This allows developers to specify an array of environments (e.g., 'beta', 'dev') where the `maximumBatchingWindow` should be set to 0, effectively disabling batching for faster message processing in those environments.

The implementation includes:
- Core logic in the `SQSHelper` to override the batching window.
- Validation to ensure the new property is a string array.
- Comprehensive unit tests to cover the new functionality.
- Updated documentation in the `README.md`, including a usage example.
