feat(kv): introduce key and payload codecs for customizable key-value encoding and decoding (#305)

Enhanced the KV module with `KvKeyCodec` and `KvPayloadCodec` to enable flexible transformations of keys and values, such as base64 encoding, encryption, or compression. Updated relevant types, tests, and implementation to support hierarchical key structure preservation and subject semantics.
