Audit workflow connections (#163)

### What kind of change does this PR introduce?

* Audits connections to conda, PyPI, GitHub, and Coveralls in lieu of
blocking them.

### Does this PR introduce a breaking change?

No.

### Other information:

It seems that Coveralls is changing a lot of the infrastructure it
requires for runs to effectively report coverage and this is causing our
builds to fail. This eases up the requirements we have on them for now.

If Coveralls does get MitM attacked, auditing the traffic will at the
very least tell us if it happens, haha
