fix: Add support for Unicode escape sequences in JSON strings

Fixed issue #530 by properly implementing Unicode \uXXXX escape sequence parsing
in the JSON tokenizer. Added tests for various Unicode escape scenarios to
ensure proper handling.

- Parses 4-digit hex code into a Unicode code point
- Properly converts to UTF-8 and adds to output buffer
- Maintains compatibility with other escape sequences
- Added comprehensive test suite for Unicode escapes
