Pin sphinx in conda, synchronize dependencies (#533)

### What kind of change does this PR introduce?

* Synchronizes a few dependencies
* Explicitly install `sphinx-autodoc-typehints` (implicitly installed
previously) with pinning to avoid broken doc builds
* Raises `clisops` version to latest stable (v0.15.0)
* Fixes coverage reporting for conda builds

### Does this PR introduce a breaking change?
