    Enable Qt 6.0 and 6.1 builds on GitHub

    These were originally not enabled because the workflows were
    copied and adapted from my dokit project. And the dokit project
    skipped Qt 6.0 and 6.1 since those Qt releases did not include
    Bluetooth support. However this project (smithy-qt) of course does
    not require Bluetooth support.
