Add validation for `SafeApp['socialProfiles'][number]['platform']` (#2094)

Adds the relevant validation for `SafeApp['socialProfiles'][number]['platform']`, falling back to `UNKNOWN` if it does not match:

- Add `SafeAppSocialProfilePlatforms` enum
- Propagate enum to relevant types
- Update tests accordingly
