Build out transcript tests

The transcript tests have been improved in several ways:
- A transcript has been added for the second mock conversation, which
  covers the remaining reaction types
- Now that timezone information is included in the transcript output,
  the transcript JSON (for both conversations) has been updated to use
  timezone-aware timestamps; this enables us to eliminate the
  tz_localize timezone logic within the tests themselves, thus
  simplifying the code (even a little)
