Fix builder location (#996)

Moves `emailBuilder` to the `__tests__` folder – files under that folder won't be part of the final build.

Additionally, the build was failing since `devDependencies` are not included in the Docker image, therefore the requirement to have `@faker-js/faker` was not met.
