Don't set "units" attribute for datetime types

Since the datetime units are handled by numpy and pandas internally,
we don't set the "units" attribute of the xarray variable.
Note that in case this is set, this might also conflict with the time
encoding setting when serializing to netcdf, resulting in an error.
