vochain: improve type safety

BaseApplication.Service was always of type *tmnode.Node in practice;
there wasn't a good reason to keep it as an interface type,
particularly since we type asserted to the named type in many places.

While here, rename the Node field to NodeClient, and Service to Node,
which better reflects what each field actually is.
