Layout: allow extension of synthesized encode/decode functions

After binding a layout instance to a constructor with `setClassLayout`
the user might want to post-process the object produced by decode,
e.g. to perform additional decoding operations.  Similarly
pre-processing the object before encoding may be desired.  Supporting
this requires that the properties holding the synthesized functions be
writable.
