Enhancements in go testing scripts and EC2 go package

1. Updated go testing scripts to improve log handling:
  - Errors are now directed to a timestamped log file to assist with debugging.
  - The run_tests function was created to improve code reusability.
  - Streamlined the go vet script to reduce complexity.

2. Enhanced ec2 package:
  - Added documentation comments to several types and functions.
  - Introduced a new function, GetLatestAMI, which fetches the latest AMI based on given criteria.
  - Created a new type, AMIInfo, to represent the required information for finding AMIs.

3. Added an example test file for the EC2 package.
