Update Sidekiq to latest 6.x release

Sidekiq 7.0 introduces breaking changes that we'll need some time to
accomodate.  Sidekiq 7.x also depends on Ruby 6.0 or above.

For now, limit to 6.x releases and update to the most
current 6.x release.
