feat: Add exclusion of specified packages in CreatePackageDocs

Enhance CreatePackageDocs function to accept an additional variadic argument that specifies packages to be excluded from documentation generation. This functionality is achieved by mapping the excluded packages and skipping them during the processing of Go files.

Also, update the function documentation to reflect the changes and adjust the test cases to test the new functionality.

This enhancement provides more flexibility for users to control which packages get documented.
