Remove virtualKeypadVersion from perseus anlaytics event (#585)

## Summary:

When I created the initial analytics event for driving out how analytics would look in perseus (`perseus:expression-evaluated`), I was hoping we'd be able to figure out which keypad the expression widget was using. But in most cases (today) that is decided by the host application. 

~So I'm going to remove it from the event and force the host application to fill that in before sending it on to CEDAR.~

EDIT: After talking with @handeyeco, we decided to make this key optional. We will be able to fill it in within Perseus sometimes, but not always.
