Improve unityVersion property resolution

Description

As all other properties from `UnityVersionManagerExtension` the property
`unityVersion` property should also be configurable through properties
and environment variables.

This patch adds a resolution chain for the property `unityVersion`.
As a fallback the unity project version is used.
