feat(feature/array-validation): Add array type definitions and field specs

- Add item_spec type for array items
- Add {:array, item_spec()} to field_type
- Add array constraints: min_items, max_items, unique_items
- Update normalize_field_spec and add_field for array support
- Update documentation with array type
