Drop Python 3.11, bump numpy 2.4.6 -> 2.5.3 (#72)

requires-python is now >=3.12,<3.15 and the 3.11 classifier is gone. The
CI pin follows numpy onto 2.5.x, whose wheels need Python >= 3.12; 2.5.3
rather than the current 2.5.4 because lammpsparser 0.0.10 requires
numpy<=2.5.3 on both PyPI and conda-forge (a conda solve with 2.5.4
fails on exactly that constraint).

- pyproject.toml, .ci_support/environment.yml, .binder/environment.yml,
  docs/environment.yml: python floor 3.12, numpy 2.5.3.
- .ci_support/lower-bound.yml: interpreter 3.12; the published floors are
  unchanged (numpy 1.26.4 ships cp312 wheels).
- .ci_support/upper-bound.yml: numpy cap stays 2.6.0
  (pyiron_workflow_atomistics 0.3.0 requires numpy<2.6); comment reworded.
- push-pull.yml: alternate legs are 3.13 / 3.14 / exclude; the
  lower-bound leg runs on 3.12. clean-install.yml matrices drop 3.11.
- README badge/text, CHANGELOG Unreleased entry.

Verified locally: check_release_ranges.py ok (numpy -> >=1.26.4,<2.6.0);
python -m build + twine check pass with Requires-Python <3.15,>=3.12;
.ci_support/environment.yml solves on 3.12 with numpy 2.5.3 and the full
suite passes (228 passed, 3 skipped, LAMMPS integration tests included);
lower-bound.yml solves on 3.12 and tests/unit passes (196 tests).
