Update CHANGELOG for Bedrock fixes

Documents all four Bedrock bug fixes in this PR:
1. Streaming temperature/top_p conflicts and timeout
2. Fixture encoding errors with binary protocols
3. Extended thinking support
4. Thinking removal for forced tool_choice
