Enhance schema handling and output options in ReqLLM

- Updated documentation to clarify the schema parameter, specifying support for NimbleOptions, JSON Schema maps, and Zoi schema structs.
- Improved the `generate_object/4` function examples to demonstrate array output generation using Zoi for cleaner schema definitions.
- Added tips in the provider options to inform users about unsupported output-related options and recommended practices for using Zoi with JSON Schema.

These changes enhance the usability and clarity of schema handling in ReqLLM, facilitating more complex data structures and improving user guidance.
