chore: remove outdated example_project

The example_project is no longer needed as the E2E tests in test/e2e/
provide comprehensive testing coverage. This simplifies the repository
by removing ~8600 lines of example code that was only used for manual
testing.

Updated documentation to point to E2E tests instead.
