fix: make encoder compile without Ecto dependency

- Move Ecto.Association.NotLoaded pattern match to conditionally compiled helper
- Struct patterns in function bodies require compile-time resolution
- Using module-level Code.ensure_loaded? ensures the pattern is only compiled when Ecto is available
