chore: update dependencies and refactor route imports

- Updated eslint, globals, typescript-eslint, and mongoose to their latest versions in package.json.
- Refactored import paths in app.ts to point to the new routes directory.
- Added default route handler in src/routes/default.ts.
- Implemented note management routes in src/routes/note.ts for creating, retrieving, updating, and deleting notes.
- Implemented user management routes in src/routes/user.ts for creating, retrieving, updating, and deleting users.
