* Fix the 'Coverage files' step in the Release workflow
* Review skipped acceptance tests
* Update ReleaseNotes.md : About section
* Revise ReleaseNotes.md for .NET 10 SDK enhancements / Final doc version
Updated release notes for .NET 10 SDK upgrade and new features.
* Write release notes for ocelot.readthedocs.io online docs
* Convert ReleaseNotes.md to SemVer template, ensuring links are not broken for email campaign, in future
* build.cake : CreateReleaseNotes -> Exclude beta/alpha releases (tags) to compute latest stable release tag
* build.cake : CreateReleaseNotes -> Top 5 contributors
* Review RST documentation sources and perform a build to ensure it is free of errors:
1. Update 25.0.0-beta.* links to the 25.0.0 tag, pointing to the stable build.
2. Add a table of contents (TOC) at the beginning of each chapter for the HTML website.
