#2386 Overridable WebSocket buffer size via virtual property and custom middleware injection (#2387)

* feat(websockets): make DefaultWebSocketBufferSize virtual and add pipeline injection

- Replace private const DefaultWebSocketBufferSize with protected virtual property
- Add WebSocketsProxyMiddleware override to OcelotPipelineConfiguration
- Update OcelotPipelineExtensions to support custom WS middleware injection
- Add unit tests for virtual property default value and subclass override

* feat(websockets): add acceptance test and WebSocket sample for #2386

- Acceptance test ShouldProxyWebsocketInputToDownstreamServiceUsingCustomMiddleware
  verifies custom WebSocketsProxyMiddleware injection via OcelotPipelineConfiguration
- New Ocelot.Samples.WebSocket sample demonstrates subclassing with 65536-byte buffer
- Ocelot.Samples.slnx updated to include the WebSocket sample project
