Add ability to override branch by environment variable. (#29)

*Extract custom logic from versioner.  Caller will be able to define their own custom logic.
*Default to normal behavior if the branchNameDisplayOverride returns null.  Also exposing the removing of prefixes and cleansing so the custom function can use them if desired.
