Verify production/staging server TLS when using poller serve
Resolves #39

* Adding unit tests
* introduced testify for better assertions

* Downgrade Fatal to Error logging within certs loading

* Addressed PR comments
* add const for enabled env vars
* introduced docker specific endpoint config

* Also use staging SRV lookups
* and split the root CAs correctly for prod vs staging
* remove port part from TLS expected server name

* Fixing test compilation in serve_test

* Pass TLS config into connection rather than retaining it

* Add some test coverage
