* feat(realtime)!: fail fast on watchOS with a .transport error citing TN3135

watchOS blocks URLSessionWebSocketTask for most apps (Apple TN3135), and the
connection waits forever. URLSessionWebSocketTransport now throws a
non-retryable .transport error on watchOS unless the app opts in with
allowsWatchOSConnections. With the opt-in, the handshake gets its own deadline
(timeoutIntervalForRequest) because URLSession may never time out there.

BREAKING CHANGE: on watchOS, apps in a context TN3135 allows (for example audio
streaming) must pass URLSessionWebSocketTransport(allowsWatchOSConnections: true)
as RealtimeClientOptions.webSocketTransport.

* docs(realtime): point the CustomTransports link at the new init signature
