Normalise headers as frictionless did before 5.20

frictionless 5.20 stopped converting newlines in headers to spaces and
stripping them, so headers like "ISO\ncountry code" and multi-row
headers with a blank cell ("ISO\ncountry code ", " Value") are returned
raw. Restore the old behaviour by default via a Dialect subclass and add
normalise_headers=False to get the raw headers.
