Take the CI Go version from go.mod (#2280)

* Take the CI Go version from go.mod

CI pinned its Go version separately from go.mod. It now reads the major
and minor version from the go directive and installs the latest patch
release of it.

ci-backend and release read backend/go.mod. The e2e workflow now
extracts the major and minor version from e2e/go.mod and installs the
latest Go 1.27 patch release instead of exactly Go 1.27.0.

* Lint e2e with golangci-lint v2.14.0

v2.13.1 cannot read the export data of Go 1.27.3, the latest 1.27 patch
release e2e now installs. ci-backend already lints with v2.14.0.

* Drop the patch version from the go directives

backend, e2e and the memory_store example declared go 1.27.0, and the
e2e workflow installed exactly that release. go 1.27 states the same
minimum without pinning a patch release; no dependency requires 1.27.0,
so go mod tidy keeps it.

* Lint e2e with golangci-lint v2.15.0

v2.15.0 is the current release, and the CI-wide bump to it changes this
line the same way, so the two changes merge cleanly in either order.
