fix(validate): enforce the RFC 4122 variant in the UUID3 pattern

The UUID3 pattern accepted any variant bits, while the UUID4 and UUID5
patterns next to it require the two most significant bits of the 4th group
to be 10xx.

Taken from #357, where the pattern put [89ab] on the second group instead
of the fourth, so every valid UUID3 (including the one TestStringCheck
uses) was rejected. The negative cases from that PR are kept.
