Add branding (colours, logo) to the field profile

The "branding" section of field-profile.json overrides the brand
colours of the app (primary, accent, background, secondary,
secondaryDark) and replaces the Mergin Maps logo, so an organisation
can make the app look like its own product without a separate build.

Branding is applied when a project is opened and remembered for the
next start. A project without branding restores the default look.
Reading the field profile moved to FieldProfile, which quick capture
now uses too.

The app icon, app name and native splash screen are set at build time
and are not part of the field profile.
