CI: measure coverage of the LFPy package, not of the test suite (#484)

The pytest step passed `--cov=LFPy/test/`, so coverage.py was told to
measure the test files themselves. The reported numbers were therefore
close to 100% by construction and said nothing about how much of the
library is exercised.

Point the flag at the package instead (`--cov=LFPy`). Locally this
yields 88% total coverage, with the real gaps visible where they
matter: templatecell.py 52%, cell.py 76% (315 uncovered statements),
network.py 79%.

Note that `LFPy/alias_method.py` and `LFPy/run_simulation.py` report 0%:
the compiled Cython extensions are imported instead of the pure-Python
shims, so that code is exercised but not measured. This is a reporting
artifact, not untested code.

CI configuration only -- no library, test or numerical behaviour is
changed by this commit.
