build: declare support for Python 3.15 (#146)

Python 3.15 is out (3.15.2 is current), but the classifiers of the seven
packages stopped at 3.14. With the test Dockerfiles switched to
python:3.15-slim, all seven suites pass on 3.15.2 with thumbor 7.8.0 and
Pillow 12.3.0, so every pyproject.toml now lists the 3.15 classifier.

thumbor 7.8.0 publishes wheels only up to cp314, so on 3.15 pip builds it
from the sdist, which needs a C compiler (gcc) on the host until thumbor
ships cp315 wheels; Pillow 12.3.0 already has them. The plugins themselves
are pure Python. CI still runs only the 3.12 images, so 3.15 stays covered
by local runs rather than by the test matrix.
