Keep MQTT clients online across drops and add a one-line Subscribe

- Give the ping 10 seconds to come back; it was 1 second, which cut good links on slow networks
- Cap the wait between reconnect attempts at 10 seconds; the paho default lets it grow to 10 minutes
- The resubscribe loop checks IsConnectionOpen, since IsConnected stays true while reconnecting and the loop spun on a dead link
- New Callback.Subscribe(topic, qos, onMessage) subscribes a topic on each connect in one line; a rejection (return code 0x80) now counts as a fault, so a topic without permission stops looking subscribed
- The gap between callback attempts starts at 100ms and doubles up to 5s, so a callback that keeps failing does not flood the logs
- SetLog keeps the Log in an atomic slot, so a swap while clients run is safe
- Demos use uuid.NewString in place of the private utils package, so the code copied out of the README builds as is; the unused utils package is removed
- Tests: reconnect once kicked from the service side, a rejected subscription, and a test of each exported function; fix two data races in the tests
- go.mod moves to Go 1.26 since the newest x/net and x/sync need it; the CI matrix, badge and README follow; the release workflow and .gitignore match the newest templates
- Counted loops switch to the range form
