docs: mark the repo as home of Roles v3 (not yet in production) (#522)

* docs: mark the repo as home of Roles v3 (not yet in production)

- point to zodiaceco/zodiac-modifier-roles-v2 for the production v2
  contracts and tooling instead of the v1 sources
- replace the v2 deployment addresses, chain list and subgraph link with
  the v3 status (not deployed yet, first release networks) and a link to
  the v2 deployments
- update packages (no subgraph or deployments package, add
  integration-tests), dev setup (`yarn build`, no `yarn prepare`),
  compiler (0.8.37, cancun), CI badge and audits (v3 audit, Oct 2026)
