Adopt gormcnm v0.0.1: ordering via Ordering, add Pluck and Scan

- Sorting callbacks of FindO, FindPage, FindPageAndCount and the two scope builders return gormcnm.Ordering, the new name in gormcnm
- Direct GORM sorting uses Asc() / Desc()
- Add Pluck[T] and Scan[T] as generic methods (Go 1.27), with tests
- Fix a panic in FindPage and FindN when the limit is -1 (GORM: no limit)
- Write interface{} as the built-in alias; UmcV1 now asserts the cache failure
- Raise Go to 1.27, upgrade dependencies, align CI and README template; README drops the GitHub stars image and the gormzhcn link moves to yylego
