perf: Keep asset copies in memory without a store

- perf: Without Config.Store, skip the write path built for stores that
  fail. It spends a goroutine, retries and a 2nd copy of the bytes on
  each copy. Remove the unreleased inmem store and BytesStore, which nil
  replaces. First br request of a 222 KB script: 719 -> 692 allocations.
- docs: Rewrite the static asset guide as a tutorial. Recommend the disk
  store for copies that take too much memory or megabytes of assets at
  brotli 11, and document custom stores.
